If you have ever been onto Instagram, it’s difficult not to get lost in the magical world of blogger breakfasts!
Perfectly positioned exotic berries in a superfood bowl, or a jar of overnight oats sprinkled with coconut snowflakes sure looks more appealing than the mushy Weetbix bowl we wake up to!
But if like the rest of the world you don’t have the time to concoct such beautiful breakfast displays- there is an easy way to get all the goodness you need to kick start your day, to not only delight your tummy but your eyes too!
We love this recipe because it takes less than five minutes to make and is both nutritious and filling. Whisk 2 eggs, a little milk, salt, and pepper in a microwave-safe bowl. Add your favourite omelette ingredients like bacon, bell peppers, mushroom, and shredded cheese. Cover the bowl lightly with a paper towel, and cook in the microwave for about 1 to 2 minutes until the egg is fully cooked.
2.Smashed Avo on toast
Our go-to morning avocado toast recipe is simple. Take 1 slice of your favourite toasted bread and top with half an avocado mashed with a fork, a splash of lemon juice, chili flakes, coarse sea salt, and olive oil. You can even sprinkle some hemp seeds on top for a little extra fibre! Take that food bloggers!
3.Peanut butter on toast with honey
This too easy go-to breakfast is not only delicious but easily portable too – for kids and grown-ups alike! Spread peanut butter on toasted whole-grain bread and drizzle some honey on top. The peanut butter gets all melty and a little drizzle of honey makes it taste amazing. You can even add a banana…just because!
4.Green Egg Whites and no Ham!
This breakfast is super easy and great way to add veggies to your day. The combo is so perfect, it can also be made for a (lazy) dinner! Toast your favourite wholegrain bread. In a non-stick frying pan add a sliced chicken sausage and sauté for a minute. Crack egg whites into the pan and top with baby spinach. Sprinkle with a little salt and flip it all. Cook for another minute until the spinach is a bit crispy, and enjoy warm with your toast.
5.Smoothie for a smooth operator
This is unlike other banana and fruit-based smoothies because it isn't super sweet. The avocado makes it creamy, and all the other seeds and nuts provide healthy fats that leave you feeling satisfied. Purée 1 cup non-dairy milk, 3 raw walnuts, 1 tablespoon chia seeds, 1 tablespoon cashew or almond butter, 1/4 avocado, a splash of vanilla extract, 1 or 2 pitted dates, and about 1 cup of frozen organic berries in a blender. You’re done!
Now there is no excuse to skip breakfast!
